Job purpose: The Butcher’s role is to prepare meat and butchery specialties and to store them according to the rules of hygiene and food safety.

Required training and experience: Proven experience as a Butcher

Tasks :

  • Receive and store meat carcasses;
  • Participate in the quality control of products received;
  • Sort and select meat pieces;
  • Boning meat pieces;
  • Cutting and skinning meat pieces
  • Carry out the operations of preparation of meats and butcher’s specialities
  • Cutting portions, weighing and labeling;
  • Ensure that the conservation of meat complies with current standards of hygiene and safety;
  • Check that the temperature of the refrigerated cells and freezer is constant
  • Monitor product quality and expiration dates,
  • Ensure that the work surface and instruments of the trade (knives, choppers and slicers) are always clean.
  • Clean work materials and equipment;
  • Cook meats
  • Prepare marinades and vegetables
  • Provide basic culinary preparations
