Job purpose: The Butcher’s role is to prepare meat and butchery specialties and to store them according to the rules of hygiene and food safety.
Required training and experience: Proven experience as a Butcher
Tasks :
- Receive and store meat carcasses;
- Participate in the quality control of products received;
- Sort and select meat pieces;
- Boning meat pieces;
- Cutting and skinning meat pieces
- Carry out the operations of preparation of meats and butcher’s specialities
- Cutting portions, weighing and labeling;
- Ensure that the conservation of meat complies with current standards of hygiene and safety;
- Check that the temperature of the refrigerated cells and freezer is constant
- Monitor product quality and expiration dates,
- Ensure that the work surface and instruments of the trade (knives, choppers and slicers) are always clean.
- Clean work materials and equipment;
- Cook meats
- Prepare marinades and vegetables
- Provide basic culinary preparations
